Singapore fried rice noodles with smoked tofu

Serves 2

Ingredients

Cupboard

2 portions • Rice noodles dry
1 tbs • Mild curry powder
1 -2 tsp • Brown sugar
1 -2 tbs • Soysauce
1 -2 tsp • Sugar
1 tsp • Chilli Oil (Optional)
1 • smoked tofu

Fresh

1 • Red pepper
1 • Green pepper
1 • Yellow / Orange pepper
3 • Spring onions
1 • smoked tofu
1 bag • Bean Sprouts


Prep

  1. Soak rice noodles with hot water for 3 mins until soft

  2. Slice peppers, smoked tofu and onions into thin strips

  3. Slice spring onions into 2 inches in length, slice it from the middle for any bigger bits

Method

  1. Heat up a wok then add 1 table spoon of vegetable oil

  2. Add peppers and stir fry till lightly brown

  3. Add in smoked tofu, stir fry till edges turn golden brown and crispy

  4. Add in rice noodles, you might want to use a tong to mix all ingredients well

  5. Add in curry powder

  6. Add in Soy Sauce from the edge of the wok

  7. Continuing mixing and add in chill oil

  8. Add in Bean Sprouts

  9. Add in spring onions

  10. Serve
