Miso Sweet corn dip

Serves 2

Ingredients

Cupboard

1 • small Tinned Sweet corn
1 handful • Pine Nuts

Fresh

1/2 • Green Chilli
1/2 • Red Chilli
1 • Shallots
1 • Lime
1 handful • Coriander
2tsp x Miso


Prep

  1. Blend the sweet corn and miso until smooth

  2. Chop shallots into slices

  3. Thinly slice the chilli

  4. Cut Lime in half

Method

  1. Sauté the shallots in a medium heated pot

  2. Add in blended corn and add chilli

  3. Simmer the mixture in low heat

  4. Roast Pine Nuts in a separate pan until golden, leave on side to cool

  5. Add in Coriander and squeeze lime into mixture (this should be a puree like consistancy)

  6. Season with salt and pepper

  7. Serve with flat bread, naan or any toasted bread, enjoy!
