Miso Sweet corn dip
Serves 2
Ingredients
Cupboard
1 • small Tinned Sweet corn
1 handful • Pine Nuts
Fresh
1/2 • Green Chilli
1/2 • Red Chilli
1 • Shallots
1 • Lime
1 handful • Coriander
2tsp x Miso
Prep
Blend the sweet corn and miso until smooth
Chop shallots into slices
Thinly slice the chilli
Cut Lime in half
Method
Sauté the shallots in a medium heated pot
Add in blended corn and add chilli
Simmer the mixture in low heat
Roast Pine Nuts in a separate pan until golden, leave on side to cool
Add in Coriander and squeeze lime into mixture (this should be a puree like consistancy)
Season with salt and pepper
Serve with flat bread, naan or any toasted bread, enjoy!
